Suya (spicy grilled meat skewers) is a celebration staple - bold, smoky, made for sharing. Ingredients
For the Suya Spice (Yaji)
- 3 tbsp ground roasted peanuts (unsalted, skin removed)
- 1 tbsp cayenne pepper (adjust to heat preference)
- 1 tbsp paprika
- 1 tsp ground ginger
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp crushed stock cube or bouillon powder
- Salt to taste
For the meat
- 500g beef steak (sirloin or flank), thinly sliced across the grain
- 2 tbsp vegetable oil
- Extra yaji spice for sprinkling
- Wooden skewers (soaked in water if using a grill or oven)
Instructions
Prepare the Spice
In a dry pan, lightly toast the ground peanuts until fragrant, being careful not to burn them! Let cool.
Mix all yaji spice ingredients together in a bowl. Set aside a little extra for dusting at the end.
Prepare the Meat
Toss the beef slices with oil, then coat thoroughly in the yaji spice mix. Use your hands to massage it in for best results.
Thread onto skewers, packing pieces tightly. Let it marinate for at least 30 minutes, or overnight in the fridge for deeper flavour.
Grill or Roast
Grill method: Preheat a charcoal grill. Cook skewers over medium-high heat, turning occasionally, for about 10–15 minutes until slightly charred and cooked through.
Oven method: Preheat oven to 200°C (390°F). Place skewers on a wire rack over a tray. Roast for 20–25 minutes, flipping halfway. Move to the grill rack for the last 3–5 minutes to get that smoky finish.
Serve
Sprinkle with a little extra yaji spice, and serve hot.
